    A signature dish that bridges the culinary traditions of Jeju and Okinawa. Reinterpreting “Jimami Tofu” (peanut tofu), a traditional royal delicacy of Okinawa, this dish is crafted with Udo peanuts from Jeju to highlight its rich nutty flavor and mochi-like texture.

    The tilefish is finished with its skin grilled to a golden crisp, while a broth slowly simmered from its bones adds a deep, refined flavor.

    Featuring premium Australia Lobster, prized for its firm and succulent flesh, it is seared on a high‑temperature teppan to bring out its optimal flavor and texture.
